Gazpacho cold soup from the P.D.O. Kaki de la Ribera del Xúquer


  • 3 Persimon® kakis from the P.D.O. Ribera del Xúquer
  • 10 cherry tomatoes
  • ½ tbsp powdered ginger
  • ¼ bunch of chives
  • Olive oil
  • Salt and ground peppers
  • Tabasco
  • Water


Peel the kakis and remove the cherry tomato peduncles. Cut them into cubes.

Liquefy all ingredients in a mixer and add the olive oil, ground ginger, salt, ground pepper and a few drops of Tabasco.

Add some water if necessary to lighten the soup.

Before serving, chop up some chives and sprinkle on top.
