Gazpacho cold soup from the P.D.O. Kaki de la Ribera del Xúquer
- 3 Persimon® kakis from the P.D.O. Ribera del Xúquer
- 10 cherry tomatoes
- ½ tbsp powdered ginger
- ¼ bunch of chives
- Olive oil
- Salt and ground peppers
Peel the kakis and remove the cherry tomato peduncles. Cut them into cubes.
Liquefy all ingredients in a mixer and add the olive oil, ground ginger, salt, ground pepper and a few drops of Tabasco.
Add some water if necessary to lighten the soup.
Before serving, chop up some chives and sprinkle on top.
