Persimon® kakis marinated with spices and sautéed prawns with Sichuan pepper


  • 3 Persimon® kakis
  • 6 sprigs chervil
  • 4 sprigs parsley
  • 4 tbsp olive oil
  • Juice of ½ orange


In a bowl containing the olive oil, mix the orange juice and the lightly chopped chervil and parsley. Salt and pepper. Wash the kakis in cold water and cut them into thin slices using a mandolin slicer. Place them on a large plate and soak with the marinade. Place the bowl in the fridge.

Prawn preparation: Skew each shrimp on a skewer. Spread them on a plate, soak with a little olive oil and sprinkle with Sichuan pepper.

Now take the kaki slices out, soak them in the marinade and place on the plate. Meanwhile, using a large skillet, cook the prawns on high heat for about 2 minutes on each side until golden brown, and then mount them on their tails in glass cups.
